What I Eat in a Week

I love taking photos and documenting the recipes I try almost as much as I love the process of preparing a meal. Generally, I like quick yet delicious and nutritious meals but every now and then I like to try more time-consuming recipes. Those tend to be the most comforting ones. I have so many food photos on my phone I thought I'd share some of them here along with the recipes - if there is one - I tend to improvise a lot when I'm in the kitchen!

  1. Homemade granola, natural yogurt, honey, raspberries and blueberries
  2. Buffalo mozzarella and basil stuffed chicken wrapped with parma ham, roasted lemon asparagus and roasted tomatoes
  3. Spinach spaghetti, butter, topped with Parmigiono-Reggiano and roasted pine nuts
  4. Barley pilaf, tomatoes, kale chips and smoked salmon
  5. Cheese and spinach tortellini with homemade pesto topped with Parmigiono-Reggiano
  6. Homemade salmon spring rolls
  7. Homemade oat bread, scrambled eggs topped with Parmigiono-Reggiano, rashers and strawberries
  8. Spinach, Gouda and smoked salmon omelette
  9. Warm Asian salad (rice, spinach, green bell pepper, spring onion and cashew nuts with olive oil, garlic and soya sauce dressing)

The Weekend Edition #7

This last weekend was the best weekend we've had in a while. Monday was a bank holiday in Ireland which meant a 3-day weekend, the weather was the best I've ever seen in Dublin. I'm talking 21ÂșC, sunny and minimal wind AND for more than 3 consecutive days - whoa! We were following the weather forecast closely and conscious that this may be the only nice weekend of the summer we packed our bags for a weekend at the beach in Brittas Bay. Before we drove out to the country on Saturday we went to Bloom in the Park at Pheonix Park for a little bit of garden inspiration and Irish speciality food.

At 5'2" I've always shied away from midi skirts and dresses. That's not to say that I don't love them, I absolutely do, but I never felt as confident wearing them as I did wearing shorter hemlines. That all changed when I saw this skirt in Penneys. I bought it, got home and quickly realised that with a pair of heels midi skirts look great, even on a more petite frame. I've now worn it a couple of times, experimenting with different ways to style it and I'm glad to say I feel just as confident wearing this length as any length. So much so, that I have no problem wearing it with ballet flats! What I love most about the skirt though is the delicate  combination of the pale peachy-pink colour and the pleats. I know this will be my go-to this summer when I want a feminine look.
