The World's Easiest Warm Quinoa Salad

After a week of eating absolute junk, including takeaways 4 times in 7 days, I decided this week I'd be healthy. When I want a quick and healthy meal I always reach for quinoa. It cooks in under 20 minutes and anything can be added to it. I didn't have much in my fridge so I threw it all in. A handful of spinach, some feta cheese, pesto, tuna, and my personal favourite, pine nuts. Stir it all in and it's a one pot wonder! Healthy, balanced and nutritious. I'm a happy camper.
